Depending on how much time and effort one has, this could easily be expanded in terms of the resolution. This circuit has been built and tested.

Both pot chips are connected in parallel and share CS, clock and data; thus they are, effectively, a dual-gang stereo pot that is digitally controlled.
It won't work in actual fact, that's exactly what I suppose.
