Nice simple concept. I wouldn't say that an EPROM is "not a programmable part", however :P
A quick idea to achieve polyphony without using multiple EPROMs : during one period, quickly scan over the N samples, and integrate. Might diverge a bit from the simplicity of your design, though.

programmable as in it does not store and or run a program or perform a computation.
